Onion marmalade is not only delicious, but also extremely healthy. It is rich in vitamins and antioxidants that support the immune system and can help fight free radicals. Serve it for breakfast spread on toast, as a flavouring for desserts or even with cheese for a special taste experience. Make onion mash, it’s not that difficult: slice the onion into thin rings, sauté in a little oil and season. Add brown sugar, then the liquid stuff: balsamic vinegar and red wine and Worcestershire sauce. If desired, add a little spicy, then simmer over low heat for 30-40 minutes until it’s a jam consistency.
Ingredients:

  • 4-5 large heads of onion
  • 2 bay leaves
  • 1 sprig rosemary
  • 2 dl red wine
  • ½ dl balsamic vinegar
  • 20 g brown sugar
  • salt, pepper
  • 1 tbsp Worcestershire sauce
  • A little chilli pepper
